In video production work, component or composite, we use well made coax for video, with cable and connectors designed for 75-ohm use. I don't know of any twisted pair cables that are 75-ohm. The choice of conductor diameters and dielectric properties of the insulators determine the balance of resistance and reactance that make a cable "75-ohm" at video frequencies, the upper end of which can be quite a few megahertz for analog video and about a couple gigahertz for digital video.
Of course in the audio spectrum, we are using balanced, twisted pair lines almost esclusively. Would love to see more consumer gear use balanced lines for audio.
In some instances you would not necessarily notice a difference between some cables for video. Depends on signal and the equipment you use also. Bottom line, IMHO, I would use properly terminated, good quality coax for video.
