When I've compared component to DVI/HDMI output for my HD cable boxes (I've done this with a couple different ones), I've seen no visible difference. Based on that, I'd tend to vote for the Dish Network box going component video and leaving the three disc players on HDMI. Added bonus, it is the least disruptive for your existing wiring.
